In a shallow bowl or ziploc bag, mix together olive oil, soy sauce, lemon juice, garlic, oregano, and white wine vinegar.
Add pork tenderloin to the marinade and refrigerate for at least 30 minutes (but we prefer 3-4 hours).
Preheat the grill to medium-high heat and lightly oil the grates.
While the grill is preheating, thread pork onto skewers (soak them first if you’re using wood).
Cook for about 12-15 minutes, flipping once or twice, until the pork reaches 145℉. Serve with tzatziki, pitas, or fresh cucumber salad.
Notes
To make in the oven: Arrange skewers hanging over top a 9x13” pan and bake at 400 degrees F for 15-20 minutes, turning halfway through, until they are slightly charred and the internal temp reaches 145 degrees F.
