While the pasta is boiling, heat olive oil and garlic in a large sauce pan. Once it has started to brown, add the chopped tomatoes.
Simmer for about 10 minutes, and then mash your tomatoes with a fork.
Add salt, parsley, and Cajun seasoning and simmer for about 5 more minutes.
Remove from heat and serve over pasta.
Top with Parmesan and Mozzarella cheese.
Notes
Don't forget to do a quick taste test as your pasta cooks. For instance, you might find some aspects of the recipe that need adjusting, like the ingredient quantities. If the heat level is not up to your liking, crank it up by adjusting the cajun spice seasoning or adding some cayenne pepper into the mix. If it's your first time preparing this, err on the side of caution. Keep the cajun seasoning to 1 tablespoon, and then adjust it to your heart's content. For some, a little heat goes a long way, while others prefer extra heat, and that's totally fine.Feel free to experiment with a different type of pasta if vermicelli pasta doesn't cut it for you. Try capellini pasta or penne pasta for a fun change. You can even throw in some colorful veggies to make the dish pop even more or drizzle a little lemon juice on top to take the edge off the heat.Remember to store any leftovers in an airtight container and slide it in the fridge. The cajun pasta should remain fit for eating over the next 3-4 days.
