If you love the smoky, spicy flavor of the Gumbo at Disneyland - you're in for a treat! With chicken, sausage, and ham topped with dirty rice, it will make you feel like you're sitting right down in the bayou.

Ingredients
¼cupbutter
¼cupflour
½cuponion, diced
½cupcelery, diced
8cupschicken stock, (more or less depending how thick you want it)
1cupokra, cooked and diced
½cupchicken, cooked and diced
½cupandouille sausage, diced
½cupham, cubed
14.5ouncesdiced tomatoes, 1 can
½teaspooncajun seasoning
salt, to taste
1teaspoongumbo file
4cupsNew Orleans style dirty rice , cooked, (you can also use white or brown rice)
In a large stock pot over medium-low heat, melt butter. Whisk in flour, and cook for 12-15 minutes (stirring occasionally), until it becomes a caramel color.
Adjust heat to medium-high and add onions and celery. Stir and cook for about 5 minutes, until vegetables begin to soften.
Stir in chicken broth 1 cup at a time, making sure the ingredients don't clump together. Simmer for 10 minutes.
Add all the remaining ingredients (except the gumbo file, rice and green onions) and return to a simmer.
Add the gumbo file. Stir to combine.
Serve each bowl of soup with 1/2 cup rice and garnish with green onions.
Notes
*If you don't have gumbo file, you can substitute cornstarch by mixing together 1 Tablespoon of cornstarch and 1 Tablespoon of water and adding it to the soup.
