Cook the sausage; heat olive oil in a large skillet over medium-high heat. Slice the sausage into ¼ inch thick slices. Add the sausage to the skillet with the broccoli and yellow bell pepper. Cook, stirring occasionally, until the sausages are golden brown.

Prepare the sauce; whisk together the soy sauce, maple syrup, water, cornstarch, sesame oil, and orange juice if using.
Add the sauce:
Add the prepared sauce; pour the soy sauce mixture over the veggies and sausage. Add the minced garlic and cook for 4-5 minutes or until the sauce is thickened.
Serve:
Season the sausage stir-fry with salt and pepper, to taste, if needed, and serve warm.
Notes
The original recipe was created using pre-cooked chicken sausage. If you want to use fresh sausage, you will need to increase the cooking time. If you are using sausages with casing, make sure to remove the casing before cooking.
