Lion House Banana Bread Muffins with Almond Glaze Recipe

Small Mixing Bowl
- ½ cup butter (or margarine)
- 1 cup sugar
- 2 eggs
- 1 cup mashed bananas 3-4 bananas
- ¼ cup milk
- 1 teaspoon lemon juice
- 2 cups flour
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chopped nuts (optional - I like walnuts best!)
Optional Almond Glaze
- 2 cups powdered sugar
- 5 Tablespoons milk
- ½ teaspoon almond extract
Preheat oven to 350 degrees.
In a large mixing bowl, cream butter and sugar together.
Add eggs into mixing bowl and beat. Add in mashed bananas, milk, and lemon juice.
In a separate bowl, combine dry ingredients and then add to wet ingredients. If using, fold in nuts.
If Making Muffins:
Bake in greased muffin tins (or use baking cups) for about 20-22 minutes. This recipe will make about 16 muffins.
If Making Mini Muffins:
Bake in greased mini muffin tin (or use mini baking cups) for about 11-13 minutes. This recipe will make about 48 mini muffins.
To make optional glaze:
Mix together powdered sugar with milk and almond extract until smooth. Drizzle on top of muffins or loaf of bread. I like to put the glaze on while the muffins are still warm so that it melts into the bread.
- The glaze on top is optional they taste great with or without it.
