Cauliflower Crust Pizza Recipe

- 20 ounces frozen riced cauliflower 2 bags or 2 cups of fresh riced cauliflower
- ½ teaspoon salt
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 cup grated parmesan cheese
- 2½ cups shredded Mozzarella cheese divided
- 2 eggs
- ¾ cup pizza sauce
- 16 pepperonis optional topping
- 1 green bell pepper diced, optional topping
- 4 ounces sliced mushrooms 1 can, optional topping
- 2 Tablespoons sliced olives optional topping
Preheat oven to 425.
Steam cauliflower bags according to directions on package and allow them to cool.
Using cheesecloth (or dish towel) squeeze moisture out of cauliflower. It's important to squeeze out as much as you can, don't worry about mashing the cauliflower.
In a bowl, combine cauliflower, salt, Italian seasoning, garlic powder, Parmesan cheese, 1 cup Mozzarella cheese, and eggs. Mix until well combined.
On a parchment paper lined pan, separate dough into two halves.
Flatten each half into an 8 inch pizza crust (this will make two 8" pizzas).
Bake for 10 minutes, or until the top of the crust begins to golden.
Remove from oven and top with pizza sauce and remaining Mozzarella cheese.
Finish it off with your favorite pizza toppings.
Return to the oven for 6-8 minutes or until cheese has melted and begins to bubble.
