- 1 lb ground turkey
- 1 medium onion diced
- 1 (15) oz can pinto beans rinsed and drained
- 1 (1oz) pkg low sodium taco seasoning
- 1 cup salsa
- 6 whole wheat tortillas
- 1 cup shredded lettuce (optional topping)
- 6 Tablespoons lite sour cream (optional topping)
- 6 Tablespoons shredded cheddar cheese (optional topping)
In a large skillet, brown ground turkey and onion until turkey is no longer pink. Drain, then add in beans, taco seasoning, and salsa. Let simmer for about 5 minutes to let the flavors meld together.
Top each tortilla with meat, lettuce, sour cream, and cheese, along with fresh pico de gallo (if desired).
You could most definitely use ground beef instead of ground turkey in this recipe. Cook the recipe as directed in the instruction. Ground Beef usually cooks a tiny bit faster than ground turkey, so be sure to keep an eye on it, as you cook it.
This could most definitely be made into a freezer meal. I wouldn’t prepare the tacos or the toppings, but you could definitely freeze the meat. I would recommend freezing the cooked meat for up to three months.
