Equipment

Ingredients

  • 8 ounces orzo pasta
  • ½ cup olive oil
  • cup white wine vinegar
  • 2 teaspoons dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup grape tomatoes
  • ½ cup kalamata olives
  • ½ cup cucumber diced
  • 1 pound chicken breasts cooked and cubed
  • 2 ounces crumbled feta cheese

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a small bowl, combine olive oil, vinegar, mustard, garlic powder, oregano, basil, onion powder, salt, and pepper.
  • In a large bowl, mix together tomatoes, olives, cucumber, chicken, orzo, and dressing. Top with crumbled feta cheese and enjoy.

Notes

We ate this warm, but it also tastes really good cold!
