Ingredients

  • ¼ cup black beans
  • 1 Roma Tomato diced
  • cup Red Onion diced
  • ½ cup cilantro chopped
  • 1 teaspoon garlic minced
  • 1 teaspoon lime juice fresh
  • ¼ cup canned corn optional
  • 1 jalapeno pepper optional
  • 16 ounces guacamole prepared

Instructions

  • Rinse and drain the black beans and place in a large mixing bowl.
  • Add in diced tomatoes, diced onion, cilantro, minced garlic, and lime juice. Mix together well. Add in optional add-ins if desired - corn and diced jalapeno pepper.
  • Gently fold in the prepared guacamole.
  • Refrigerate for 2 hours. Mixing it up a few hours before serving allows the flavors to really blend for a flavorful guacamole.
