Mixing Bowl (2)
- 3/4 cup pumpkin puree
- 1/2 cup butter
- 2 eggs
- 1/3 cup milk
- 1/2 teaspoon vanilla
- 1 15.25 ounce spice cake mix
Frosting
- 2 Tablespoons butter
- 2 ounces cream cheese
- 1/4 cup pumpkin puree
- 1/4 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon cinnamon
- 2 cups powdered sugar
Heat oven to 350 degrees.
Line cookie sheet with parchment paper.
Mix together pumpkin and butter until smooth.
Blend in eggs, milk and vanilla.
Slowly add in the cake mix and beat until all is blended well.
Drop batter onto cookie sheets.
Bake for 12 minutes.
Remove from oven and let cool completely.
Make frosting by mixing all ingredients together until well blended.
Spread on the back side of a cookie, then top with the other cookie to sandwich them together.
