Ingredients

  • 3 cups flour
  • 3 Tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 Tablespoons sugar
  • 2 cups water
  • 1 15 ounce can pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup chocolate chips
  • maple syrup optional topping

Instructions

  • Preheat griddle to 375 degrees F.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, sugar, water, pumpkin, vanilla, cinnamon and nutmeg until well combined.
  • Fold in chocolate chips.
  • Pour batter onto hot griddle (I used a 1/2 cup measuring cup for bigger pancakes) and cook for a few minutes on each side until golden brown and cooked through.
  • Serve with maple syrup, if desired.

Notes

  • If you want thicker pancakes, you can add less water than the recipe recommends.
