Equipment

Ingredients

  • pounds boneless, skinless chicken breasts
  • juice from 2 limes
  • salt and pepper, to taste
  • 1 teaspoon cumin
  • 1 bunch fresh cilantro roughly chopped
  • 12 ounces frozen corn
  • 2 garlic cloves minced
  • ½ red onion diced
  • 15 ounces canned black beans drained and rinsed

Instructions

  • Spray slow cooker with non-stick cooking spray.
  • Place chicken breasts inside of the slow cooker.
  • Top chicken breasts with juice from limes, then sprinkle chicken breasts with salt and pepper and cumin. Add in cilantro, corn, garlic cloves, diced onion, and black beans.
  • Put the lid on the slow cooker and cook on low heat for 5-6 hours or high heat for 2-3 hours.
  • When cooking is complete, remove chicken from the slow cooker and shred with 2 forks. Add shredded chicken back to liquid in the slow cooker.
  • Serve shredded chicken on tortillas with your favorite toppings (sour cream, salsa, lettuce, guacamole, etc).
  • You can also use this chicken on top of a salad, in burritos, nachos, over rice . . . it's incredibly versatile and works in so many different ways!
