Equipment

Ingredients

  • 1 Tablespoon olive oil
  • pounds flank steak (keep it whole)
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 onion thinly sliced
  • 1 ounce fajita seasoning packet
  • 4 garlic cloves minced
  • salt and pepper, to taste
  • ½ cup beef broth
  • tortillas and favorite fajita toppings (like salsa, guacamole, cilantro, sour cream, shredded cheese, etc)

Instructions

  • Press SAUTE button on the Instant Pot.
  • When the pot is hot, add in the olive oil.
  • Season both sides of the flank steak with salt and pepper.
  • Brown the flank steak on one side in the hot oil for 2-3 minutes, then flip it over and brown it on the other side for 2 minutes more.
  • Sprinkle half of the fajita seasoning on one side of the flank steak, then flip it over and sprinkle the other half on the other side.
  • Place all the sliced peppers, onions, and garlic cloves on top of the meat.
  • Carefully pour in the beef broth (try to pour it on the side of the Instant Pot so that it doesn't wash the flavor off of the steak).
  • Place the lid on the Instant Pot. Set the timer for 10 minutes. When the timer is done, let the flank steak do a natural release for at least 15-20 minutes.
  • Use a slotted spoon to remove the veggies and flank steak. Slice up the flank steak and then serve steak and vegetables on tortillas with your favorite fajita stoppings. You can also drizzle some of the flavorful liquid in the Instant Pot on top of your steak and vegetables for more flavor.

Notes

Try your fajitas with some if not all of these delicious toppings:
  • Salsa (verde is always a good choice in my book!)
  • Guacamole
  • Freshly chopped cilantro
  • Sour cream
  • Shredded cheese
  • Black beans
  • Rice
  • Refried beans
