Pineapple Chicken Salad Pitas are my new go to lunch. They are so easy to make, and are full of flavor. They are light, yet filling, and only require a few ingredients. They come together in a matter of minutes and taste amazing.

Ingredients

  • 3 boneless skinless chicken breasts (cooked and shredded)
  • ½ cup shredded carrots
  • cup sliced almonds
  • cup light mayonnaise
  • 4 green onions (finely chopped)
  • ¼ cup plain fat-free Greek yogurt
  • 1 Tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 (8 ounce) can crushed pineapple (drained)
  • 6 (6 inch) whole wheat pitas (cut in half)
  • 6 Romaine Lettuce Leaves

Instructions

  • In a large mixing bowl combine shredded chicken, carrots, almonds, mayonnaise, green onion, yogurt, Worcestershire sauce, garlic powder, salt, pepper and crushed pineapple.
  • Divide chicken mixture evenly between pitas, top with lettuce and serve.
