Cheesy Zucchini and Squash Bake Recipe

This Cheesy Zucchini and Squash Bake is a perfect low carb side dish to any dinner. We love making this easy side dish with all of our extra garden squash in the summer and fall.

Equipment

Ingredients

  • 3 medium zucchini sliced
  • 3 medium yellow squash sliced
  • 4 green onions diced
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste
  • ½ cup grated parmesan cheese

Instructions

  • Preheat oven to 350 degrees F.
  • Spray an 8x10-inch baking dish sprayed with nonstick cooking spray.
  • Combine zucchini, squash, onion, Italian seasoning, garlic powder and cheddar cheese in a large bowl until well combined.
  • Season with salt and pepper, to taste.
  • Spread the zucchini and squash mixture in prepared baking dish and bake, uncovered, for 25-30 minutes or until zucchini is tender.
  • Remove baking dish from the oven, sprinkle on Parmesan cheese and return to the oven.
  • Bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.

Notes

  • You could always adapt this recipe to fit the likes and dislikes of your family.  Whether that means changing up the seasonings, adding more or less cheese, or throwing in some mushrooms or other vegetables.
