Ingredients

  • 6 sweet potatoes diced
  • 2 Tablespoons olive oil
  • 8 slices of bacon
  • 1 teaspoon freshly cracked pepper
  • ½ cup pure maple syrup

Instructions

  • Preheat oven to 400 degrees F.
  • Cover a baking sheet with aluminum foil and spread potatoes out in an even layer.
  • Drizzle olive oil over potatoes.
  • Place in oven and and bake for 40 minutes.
  • While the potatoes are cooking, cook bacon in a pan until you reach desired doneness.
  • Sprinkle bacon with fresh cracked pepper and cut into small pieces.
  • In a large mixing bowl, combine cooked sweet potatoes and bacon.
  • Pour maple syrup over potatoes and bacon and stir gently until well combined.

Notes

  • We recommend using any type of sweet bacon for this recipe. An Applewood smoked bacon, a hickory bacon, or even a peppered bacon would tastes good with this recipe.
