Mushroom Swiss Melts Recipe
I whipped up some of these Mushroom Swiss Melts for my husband and I for lunch a few days ago and they were a hit!

Non-stick Cooking Spray
- 1 Tablespoon olive oil
- 1 onion diced
- 2 cups sliced mushrooms
- 8 Tablespoons thousand island dressing
- 8 slices rye bread
- 4 slices Swiss cheese
Add olive oil to a large saucepan over medium-high heat, and cook onion and mushrooms until soft; set aside.
Heat a griddle or pan over medium heat and spray with nonstick cooking spray.
Spread one Tablespoon of thousand island dressing on each piece of bread.
Top with cooked onions and mushrooms and a slice of swiss cheese.
Place 4 remaining pieces of bread on top to create sandwiches.
Place on griddle and cook for a few minutes on each side, until bread is toasted and cheese is melted.
Serve warm with additional thousand island dressing, if desired.
