Mushroom Swiss Melts Recipe

 I whipped up some of these Mushroom Swiss Melts for my husband and I for lunch a few days ago and they were a hit!

Ingredients

  • 1 Tablespoon olive oil
  • 1 onion diced
  • 2 cups sliced mushrooms
  • 8 Tablespoons thousand island dressing
  • 8 slices rye bread
  • 4 slices Swiss cheese

Instructions

  • Add olive oil to a large saucepan over medium-high heat, and cook onion and mushrooms until soft; set aside.
  • Heat a griddle or pan over medium heat and spray with nonstick cooking spray.
  • Spread one Tablespoon of thousand island dressing on each piece of bread.
  • Top with cooked onions and mushrooms and a slice of swiss cheese.
  • Place 4 remaining pieces of bread on top to create sandwiches.
  • Place on griddle and cook for a few minutes on each side, until bread is toasted and cheese is melted.
  • Serve warm with additional thousand island dressing, if desired.
