Preheat oven to 400 degrees F.
Cover baking sheet with aluminum foil.
Slice potatoes about 1/8 inch thick, without cutting all the way through to the bottom, creating a fan effect. Place potatoes on prepared pan.
Carefully place sliced butter in between a few of the slices.
Rub minced garlic on top of potatoes or in between the slices.
Top with salt and pepper, to taste.
Bake for one hour, or until potato is fully cooked
Take out potatoes and place one inch slices of cheese in between the slices of potatoes.
Place back in oven for 5 minutes.
After cheese is melted, take potatoes out of oven and let them cool for at least 10 minutes, to avoid sour cream melting.
Top with sour cream, chopped green onions, and bacon. Serve warm.
