Easy Mexican Salsa Rice Recipe

A super easy way to add some spice to your rice

Equipment

  • Microwave Safe Bowl

Ingredients

  • 2 cups instant brown rice
  • 2 cups water
  • 1 envelope enchilada sauce mix (or you could use taco seasoning)
  • 1 cup salsa (I used mild so my kids would eat it- go as hot as you want!)
  • 1 (4oz) can green chilis

Instructions

  • Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender.
  • Let sit for 3-5 minutes and it will soak up most of the liquid in the bowl. Fluff with a fork and serve.
