Valentine’s Day Neapolitan Cupcakes Recipe

These Valentine's Day Neapolitan Cupcakes are so fun and festive, and perfectly combine all your favorite flavors. They are easy to make, and make quite a few, so they are perfect for feeding a crowd. You will love these yummy cupcakes.

Strawberry cake PLUS brownie batter? Seriously- it’s one of the most delicious cupcake combinations I have had.
The colors are so cute for Valentine’s day. These would be perfect for any Valentine’s party or no occasion at all.

And trust me- anyone could make these. They are easy to throw together in no time at all.

When I first thought of making these, I didn’t know if it would be possible. I was so nervous to try them out, but once I got started, they were so easy to make.

They really are the best tasting cupcakes I have ever made or eaten. I have eaten a lot of cupcakes in my lifetime, and this flavor combination, by far, takes the cake.

If you know a Neapolitan lover, you need to send them this one. It’s a dessert like you’ve never quite experienced.

could i make these in a pan?

I think you could most definitely make these in a pan. However, I do recommend maybe cooking the brownie bottom a little bit first, since it is a much thicker batter and takes more time to bake.

I would maybe bake them for about 12 minutes, remove them from the oven, then carefully add the strawberry cake batter on top, by the spoonful, then carefully spreading it out.

For this recipe, we would recommend using a 9×13 inch pan.

garnish it

I love a good garnish. This recipe calls for sprinkles, but here are a few other options you could garnish it with:

  • Mini Chocolate Chips.
  • Seasonal Colored M&M’s (these would be cute with pink and white).
  • Pink, White and Brown Sprinkles.
  • Chocolate Bar Shavings (I like to use Hershey’s with Almonds).
  • Magic Shell (the ice cream topping that hardens quickly. You could also do melted chocolate chips).

Ingredients

  • 1 (19.5 ounce) package brownie mix
  • 2 eggs
  • 1/2 cup vegetable oil (you could also use canola oil)
  • 1/4 cup water
  • 1 (18.25 ounce) package strawberry cake mix (or any flavor you want)
  • 2 tablespoons vegetable oil (you could also use canola oil)
  • 1 1/3 cups water
  • 3 egg whites
  • Frosting:
  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 2 tablespoons milk
  • 4 cups powdered sugar
  • 1/4 cup chocolate sprinkles

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line 40-48 muffin cups with paper liners (I only got about 40 cupcakes, but you may get more).
  2. Whisk together the brownie mix, 2 eggs, 1/2 cup canola oil, and 1/4 cup water in a bowl. Stir just until fully incorporated, about 50 strokes; set aside.
  3. Mix the cake mix, 2 tablespoons canola oil, 1 1/3 cup water, and 3 egg whites in a large bowl with an electric mixer on low speed until combined. Mix on medium speed for 2 minutes.
  4. Spoon the brownie batter into prepared muffin cups, filling each cup 1/3 full. Spoon the cake batter over the brownie batter, until muffin cups are each 2/3 full.
  5. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.
  6. Frosting:
  7. Cream together the butter shortening, and vanilla. Then add in milk and powdered sugar 1 cup at a time. Mix until light and fluffy. Top with optional sprinkles.

  1. These are so cute! And they sound delicious too. I LOVE chocolate & strawberry together. I think my boys would go crazy for these!

    Have a great day!
    xo,
    Laurie @ Gallamore West :)

p.s. I made your crockpot BBQ Hawaiian chicken the other day... my family LOVED it. Thanks for a great and easy recipe. I can handle desserts, but dinners are soooo hard for me! :)
  2. I tried this recipe, but I had to bake them a tad bit longer because they came out liquidy (the brownie part). However, even after baking them a few minutes longer, the brownie is still a bit gooey. (I am NOT a brownie baker and hardly eat them, but a colleague made this recipe, and I LOVED it.) Should I be concerned with this?
  3. I am wondering if anyone has tried this recipe in a bundt pan...with baking the strawberry on the bottom, so that when put on a plate it would be on top? I am a little worried about trying it for a party since the brownie batter is thicker, thinking it might not work right pouring it on top of the strawberry. Would appreciate any input. Thanks.
