I love grilled pork chops, especially if they are juicy and flavorful. This marinade will give you both.
My mom has been using this recipe as her pork chop marinade for years (she thinks that she cut it out of the newspaper a long time ago) and it’s been my go-to pork chop marinade ever since she gave it to me.
Pork chops sometimes cook up dry, but this marinade makes the pork so juicy and full of perfectly-balanced flavor. It’s fail-proof!
This recipe also works great with chicken. Either protein is delicious.
How to make simple pork chop marinade
With most marinades on our site, we use easy ingredients that you most likely already have on hand. The ingredients that you will need for this marinade are:
- soy sauce (this is the secret ingredient that makes it so juicy! It doesn’t taste Asian-flavored at all)
- chili sauce (you can find this by the ketchup at the grocery store)
- honey
- vegetable oil
- green onions
- curry powder
Substitute ingredients
If you don’t have chili sauce, feel free to use some sriracha (it will definitely add a kick!) or even a Thai chili sauce.
If you don’t have curry powder, try this homemade curry powder recipe: 1/2 teaspoon tumeric, 1 teaspoon cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon chili powder.
Mix all seasonings together and keep in an air-tight container, using what you need for the recipe.

How to cook pork chops in the oven
If you don’t have a grill or it’s the middle of winter and you don’t feel like firing up the grill, have no fear! You can bake these pork chops in your oven. Here’s how:
- Preheat oven to 375 degrees F.
- Spray a 9×13″ baking pan with non-stick cooking spray. Place pork chops inside pan (after they are finished marinating) and pour marinade on top of chops.
- Cook uncovered for 25-35 minutes (depending on thickness of chops) or until internal temperature reaches 145 degrees F.
How long can you keep marinated pork in the fridge
The key to these juicy pork chops is letting them marinade for 6-8 hours. Sometimes I even let them marinate overnight.
I wouldn’t recommend marinating these pork chops much longer than 12 hours. The main ingredient – soy sauce – is very acidic and will break down the pork chops, making them mushy and not an edible texture.
If you do want to make these pork chops in advance, I would recommend placing the pork chops and marinade in a resealable gallon-sized freezer bag and keeping them in the freezer.
They will keep in your freezer for up to 30 days.
When you are ready to grill them, remove them from the freezer 12-24 hours in advance and place them in the fridge to thaw.

Ingredients
- 1/2 cup soy sauce
- 1/4 cup chili sauce
- 1/4 cup honey
- 2 Tablespoons vegetable oil
- 2 Tablespoons green onion (finely chopped)
- 1 teaspoon curry powder
- 1 1/2 lbs boneless pork chops (about 4-6 chops)
Instructions
- In a gallon-sized resealable bag, add the soy sauce, chili sauce, honey, vegetable oil, green onion, and curry powder and mix until completely combined (I just use my hands and squish it all around in the bag until it's all mixed).
- Add in the pork chops, then seal the bag. Place in the fridge for at least 2 hours, but I highly recommend letting them marinade for 6-8 hours (or even overnight!).
- Remove bag from fridge, place pork chops on grill over medium high heat and discard marinade. Grill for 6-8 minutes on each side or until the insides of the pork chops are no longer pink.
- Enjoy!
