Shepherd’s Pie with Sweet Potatoes

Although we post a lot of delicious treats we all try to eat semi healthy. This Sweet Potato Shepherd’s Pie is easy to make and it is one of our healthier dishes. With veggies, ground turkey, and sweet potatoes it doesn’t get much better than this.

This Shepherd’s pie recipe almost tastes like Thanksgiving in a pan. It has all the delicious tastes and textures of your favorite meal, all in one pan. The family is going to love this dish.

How to cook Sweet Potatoes and Mash them

Cooking sweet potatoes is a little different than cooking other potatoes. They are a little denser and harder to cut. Boiling them also takes longer because of this. We want to help you out and give you some pointers so you have perfect sweet potatoes every time.

Step 1: Purchase the perfect sweet potatoes. Sweet potatoes with a smooth skin and a firm texture are going to be the best sweet potatoes with the most taste.

Avoid sweet potatoes with soft spots or lots of sprouts. Store your sweet potatoes in a cold, dark place for the crispest sweet potatoes and to avoid rotting.

Step 2: Peel your potatoes. When I bake my sweet potatoes, I actually prefer the skin on them? Strange I know. But I love the texture and the taste it gives. Sweet potatoes also have a lot of nutrients and potassium. It also keeps my cinnamon butter to stay on my sweet potato, so the peel is a plus.

However, when I am making mashed potatoes I always prefer my potatoes to be peeled. This will make the mash much smoother. I also wash my potatoes before peeling them. You don’t want to have any dirt remnants left behind because the potatoes will taste a little dusty.

To peel your potatoes, hold one end of the potato. Take a potato peeler and push it away from your body. I usually do this over the garbage or a recyclable grocery bag.

You don’t want to put your potato peels in the sink. This could do some damage to your disposal. We recommend doing it over a bag that you will be able to throw away, without much cleanup.

Step 3: Bring water to a boil. Depending on how many potatoes you have and their size, the amount of water will vary. You will just need enough water to cover the all the sweet potatoes.

I usually cut my potatoes into bite size pieces because they cook and soften faster. You can also just cut them into fourths. Keeping them at their full size is going to take a long time to cook.

Once all your potatoes are cut up, place them in the boiled water and cover with a lid. Let them boil for about 15-20 minutes or until they are able to mash easily.

Step 4: Once the potatoes are done boiling, scoop them into a drainer. Once they are drained, place them in a bowl or into a mixer. Mash and enjoy!
