This Slow Cooker Shredded Mexican Chicken, goes perfect with just about everything. It is so versatile, and really is, so simple to make. You are going to love it. Your family and friends will, as well.
My slow cooker is still my favorite way to get dinner on the table. I love throwing a couple ingredients in the slow cooker and letting it do all the hard work. It’s a busy mom’s best friend.
Tips for making slow cooker shredded Mexican chicken:
- I love using a slow cooker liner when I use my slow cooker. If I have a busy day and can’t cook dinner, the last thing I want to do is clean a slow cooker.If you have never used a slow cooker liner, you need to stop what you are going and get yourself some, right now. They are usually found by the ziplock bags at the grocery store. They will change your life.
- If you are in a hurry and don’t have 6-7 hours for it to cook, you could also do the cook on high option and cook fro 3-4 hours.
What can I use this chicken for?
I love how versatile this chicken is. I use it in so many recipes, because it has so much flavor, and pairs well with many different dishes.
I love to serve mine on:
-Taco Salads
-Burritos
-Enchiladas
-Quesadillas
-Rice and Bean Bowls
And the list goes on and on. This chicken is so delicious and pairs will with just about any other Mexican dish.
What toppings could I use?
I am a toppings person. I am all about toppings. If you are making tacos, burritos, enchiladas, salads, etc., you need toppings. Here are a few of my favorite things to top my chicken with:
- Fresh bell peppers
- Jalapeños
- Banana peppers
- Tomatoes
- Chopped onions
- Spanish rice
- Beans
- Guacamole or avocado
- Salsa
- Sour cream
- Cilantro
- Limes and lime juice

Slow Cooker Shredded Mexican Chicken Recipe
Ingredients
- 2 pounds boneless, skinless chicken breasts
- ¾ cup salsa
- 2 Tablespoons brown sugar
- 4 ounces green chilies 1 can
- 14½ ounces diced tomatoes 1 can
- 1 Tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- 1 teaspoon liquid smoke
- 12 corn tortillas
- 1 cup shredded lettuce optional topping
- ½ cup shredded cheddar cheese optional topping
- 1 cup salsa optional topping
Instructions
- Spray slow cooker with non-stick cooking spray. Place chicken breasts inside slow cooker.
- Add all the remaining ingredients on top of the chicken. Place the lid on top and cook on low for 6-7 hours.
- After chicken is done cooking, remove chicken from crock pot and place on a cutting board. Using two forks, shred chicken and return to slow cooker. Return chicken to slow cooker and mix with remaining liquid.
- Serve on corn tortillas with desired toppings.
