I LOVE using my slow cooker, especially when I can dump a few ingredients into it in the morning and let them slowly cook all day long.

Using my slow cooker to make perfect shredded meat for sandwiches is one of my favorites and this recipe has quickly become a staple in our family!

The story behind the sandwich

After a recent cookbook signing, my sisters and I ate at the cutest little restaurant called Blue Lemon. They have the most amazing sandwiches and I ordered their Pineapple BBQ sandwich.

It was so delicious and the whole time I was eating it, I just kept thinking that I would have to come home and try to make it for my family. The beef just melted in your mouth and the toasted bun was the perfect compliment.

After lots of experimenting, I think that I have come pretty dang close to a copycat recipe. The longer you let it cook, the better it becomes.

The meat had a really yummy flavor and the pineapple adds just a tiny amount of sweetness. So, if you want to mix up your shredded beef sandwiches, give this recipe a try!

Perfect for a crowd

Whenever I am in charge of food for a party, I love making slow cooker sandwiches. It makes food prep a breeze (dump it in the crock pot and turn it on) and the meat is always so tender and juicy.

If you need to feed the masses, this recipe can easily be doubled or tripled. You may need to split it between 2 crock pots to make sure that it all fits.

Tips for making the best Slow Cooker Sandwich:

  • before adding your food to the slow cooker, spray the inside of it with non-stick cooking spray – it will make clean-up so much easier!
  • a fattier cut of meat will keep the meat from drying out while it cooks (bonus: usually the fattier cuts of meat are less expensive)
  • if you are going to sear the meat before putting it in the slow cooker, don’t season the meat until after you sear it – searing it before will burn the seasonings
  • don’t add so much liquid – you would be surprised how much liquid will be released from the meat as it cooks
  • toasting your buns takes these sandwiches over the top – you can also butter your buns before you toast them to make them even better!

Slow Cooker Pineapple BBQ Beef Sandwiches

  • 1 (2-3 pounc) beef rump roast
  • 1 (20 ounce) can pineapple chunks (drain and reserve juice)
  • 1 onion (diced)
  • 1/2 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 1/2 cup ketchup
  • 1 Tablespoon mustard (I used Dijon mustard)
  • 2 Tablespoons Worcestershire sauce


  1. Spray crock pot with nonstick cooking spray. Place roast inside.
  2. In a separate bowl, mix together juice from pineapples, onion, vinegar, brown sugar, ketchup, mustard, and Worcestershire sauce. Pour over roast.
  3. Add pineapple chunks to roast and cook on low for 10 hours or high for 5-6 hours (I prefer cooking longer on low).
  4. When finished, shred meat using two forks (it should just fall apart by this time). Serve meat on toasted buns, topped with your favorite sandwich fixings (I like red onions, lettuce, tomatoes, and provolone cheese).

  1. YUM! These sandwiches look delicious! And its a crock pot recipe! I love all your crock pot recipes and turn most of them into freezer meals at our house! We have you Santa Fe Soup from last week in the freezer waiting for us! Can't wait to try it!

  2. Is there no chipotle in this recipe? You mentioned you ordered a chipotle BBQ Pineapple Beef Sandwich. I bet this would be good served with a chipotle mayo on the bun. Im going to try this recipe in my new pressure cooker. Hopefully, it will turn out just as good as in a slow cooker. thanks for sharing!
  3. I made this recipe yesterday. I used a fresh pineapple instead of canned. Everyone raved so much more than any meal I have ever made in my life. What an amazing recipe. Thank you so much for sharing. It is absolutely perfect for a hot day when you don't want to heat up the kitchen. I have a feeling that it will be a regular menu dish in our home.

    I'm making this today. Ended up omitting the onions and using onion powder instead (everyone in the family has texture issues with onions themselves). Just started it about an hour ago and already smells delicious.
  6. This looks amazing. I just mixed up everything & have it marinating together to toss in the crock pot on my way to work in the morning. I used a skirt steak (that was on major sale and I was at a loss of what to do with it), crushed pineapple and added a bit of minced garlic and ground ginger. I'm planning to serve it over yellow rice with a side of steamed green beans. Can't wait for dinner tomorrow!
