Slow Cooker Chicken Bacon Ranch Sandwiches

We love using our slow cookers during the summer months.  Our schedules are pretty packed trying to keep the kids busy and entertained all summer.  

You can put everything in the slow cooker in the morning and have a fun day with the kids, then come home to an amazing dinner. This chicken sandwich is loaded with flavor and the bacon knocks it out of the ballpark.

In our house, we LOVE bacon. Bacon in the morning, bacon in the evening. Everything is better with bacon. Don’t you agree? Well, this recipe HAS IT! 

This slow cooker crack chicken recipe includes all of my favorite things, cream cheese, bread, and cheese, oh yeah and of course the bacon that we have touched on a wee bit. 

This is probably one of the best slow cooker recipes we’ve created. Everyone has loved it. It is one of our most popular recipes to date. If all of these things (food, popularity, slow cooker) don’t perk your interested, I don’t know what will!

Chicken bacon ranch sandwich ingredients:

  1. Skinless chicken breast
  2. Cream cheese
  3. Cream cheese with bacon
  4. Dry ranch dressing mix (find it HERE if you can’t locate it in your grocery store)
  5. Bacon 
  6. Colby Jack cheese 
  7. Rolls or buns

  • Slow cooker
  • Non-stick cooking spray
  • Medium-sized mixing bowl
  • Baking sheet
  • 2 forks or stand mixer

Now, how do you make the best slow cooker crack chicken?

Start by spraying your slow cooker with non-stick cooking spray or you can use THESE slow cooker liners (PS they help make clean up easy!). Then, place the chicken breasts in the bottom of the slow cooker. 

Now, in a medium-sized mixing bowl, combine the plain cream cheese, cream cheese with bacon, 2 ranch dressing mix packets, and the cooked bacon pieces. 

Once everything is mixed together well, spread it over top of the chicken breasts that are at the bottom of the slow cooker. 

Place the lid on top of the slow cooker and turn it on low for about 6 to 8 hours or on high for about 4 hours or so. 

 

Be sure to watch the chicken and make sure that it doesn’t overcook otherwise it can dry out. 

 

Then, either with two forks or a stand mixer (can shred the chicken fast), shred the chicken and then return the chicken to the slow cooker and stir it back in with the ranch mix. Make sure that the chicken is coated completely. 

 

Serve the chicken on your favorite buns or rolls and then top it off with shredded cheese. Place the sandwiches on a cooking sheet and then put them in the broiler just until the cheese is melted. 

You need to watch VERY closely as this will only take about 45 seconds for the cheese to melt and to avoid the rolls from burning. 

 

Then, simply serve and enjoy!

We also like to serve ours on pitas, noodles, with rice, or even plain, it is delicious. I like to just eat it as is.

  1. I'm making this now! Couldn't find the bacon cream cheese, so I just used 2 blocks of regular cream cheese. Actually, I used the "Greek" - it's Greeks yogurt and cream cheese - lots of extra protein and IMO it's just as good as regular cream cheese. I also used a pack of real bacon bits to save time. Can't wait to try it later!!!!
  2. I made the recipe above and served it as a hot appetizer with crackers and toasted baguettes. When it was done instead of putting it on the bread. I put it pie plate that I sprayed with pan release. Sprinkled shredded cheese over the top and broiled until the cheese was melted. It was super yummy.
  3. I made this tonight. A bit salty, but when put on a nice bakery bun, it was alright. You could try with 1 dressing mix and I think it would be just fine (maybe add a little bottled ranch if you want more "ranchy flavor). I also used half pound more chicken, and thawed and dried it a bit as I was nervous about too much liquid. I used real bacon bits because I hate frying bacon! After I removed and shredded the chicken, I took out some of the "sauce", so I could control how much sauce to chicken I had. Mine finished in 5.5 hours on low.

    Starting the prep now. I did not have bacon cream cheese, as many of you didn't so I'm using 2 blocks of regular as well. Only 1 pack of ranch mix is 2oz, so I'll stick to the one. I bought precooked bacon, just need to break it up. Can't wait to try this!!!

    What is this bacon cream cheese I keep hearing about? This must be an East coast thing? I'm sooo jealous!!! I'd be eating this on crackers all by itself. I already love the veggie cream cheese on crackers. Sigh, guess I will suffer without it 😪
