Slow Cooker Busy Day Stew

This Busy Day Stew is so tasty, and perfect for those busy days, when you know you will have no time to cook dinner. Just throw it all together in minutes, and later that day, it's ready to go.

Growing up, I never loved stew. I think it’s because it was the only thing from keeping me from playing outside. I had to finish all the stew before we could go play in the snow, and ever since then, I just thought I didn’t like it.
As I got older, I realized, I actually LOVE stew, soups, and chilis. They are so yummy and so easy to throw together.
Before leaving Missouri I had a friend give me all of her family cookbooks. I really think I was in heaven. This was one of easiest crock pot meals I have ever made.
It took under 10 minutes to chop everything and throw it in the slow cooker.  And believe it or not, the taco seasoning added just the right touch.

what can i use to thicken the soup?

For this recipe, it’s a little bit thinner of a soup, however, there are a few ways to thicken it up. Here is what we recommend:

  • Cream of mushroom soup (I usually just use one can, just to make it a little more creamy).
  • Plain Greek yogurt or sour cream (the plain Greek yogurt is a healthier option, but the sour cream has a more creamy texture, that would work better in this stew).
  • Corn starch or flour. Both work great as a thickener. You will want to add it slowly, and whisk it steadily, to avoid lumps from forming.

add a little more flavor:

The best way to add a little flavor to soup, is seasonings. We love adding in a little extra taco seasoning, cumin, jalapeño salt, garlic salt, etc. If you have a favorite go to seasoning, I am sure it would taste delicious in this.

My husband like a little kick in his, and sometimes, we cook with jalapeños in the soup. You could also use a beef bullion cube as well.

  • 2 pounds stew meat
  • 1 (16 ounce) bag baby carrots
  • 1 onion (chopped)
  • 2 Russet potatoes (cubed)
  • 1 (14.5 ounce) can diced tomatoes
  • 1 tomato (diced)
  • 2 teaspoons minced garlic - optional
  • 1/2 (1.25 ounce) package taco seasoning mix
  • 1 (14.5 ounce) can beef broth


  1. Add the stew meat, carrots, onion, potatoes, canned tomatoes, fresh tomato, and garlic in the slow cooker. Sprinkle the taco seasoning on top then add your beef broth.
  2. Cook on Low for 6 to 8 hours or until carrots and potatoes are soft.

    • I know this was like a year ago... But you could add a mixture of cornstarch and water. Table spoon of cornstarch and a half a cup of hot water. Mix the cornstarch into the water so it is dissolved. It will make the sauce thicker. You could do this with a half hour left of the time and it will thicken.
