Ingredients: 64 ounce chicken broth; 2 large russet potatoes; 1 small onion; 2 teaspoons garlic (minced); 19½ ounces Jennie-O Hot Italian Turkey Sausage; 6 slices bacon (cooked); 1 cup kale (chopped)

I love a good soup recipe, but this Skinny Zuppa Toscana, took it above and beyond. It was so easy to make and full of flavor. It was the best way to warm up, on a chilly day, but I would honestly eat this all year round.

My husband and I recently completed our first ever Whole 30. We went through a lot of Jennie O’s ground turkey, especially in this soup.

We ate this meal 5 different times during our Whole 30 experience, and now that it’s over, I find myself still craving it.

I was grabbing the ingredients to make it at the store, when I saw this Lean Hot Italian Turkey Sausage, and I knew it would take this soup to the next level.

It’s good with ground turkey (and Whole 30 approved) – but using the turkey sausage is definitely my favorite.

I am a total soup lover, but this soup was above and beyond. It was literally the best soup I have ever tasted and it was so easy to make.

If you are looking for a quick and healthy dinner, I highly recommend making this one. You are not going to be sorry. It was out of this world, delicious.

Does this soup freeze well?

I love making double of this soup, because I put it in the freezer, and eat it the next week.

It does freeze, but not for long. We recommend eating it within 2 weeks of freezing it.

You will also want to thaw it, in the fridge 24 hours before serving.

When I freeze this soup, I make it, completely (cooked and all) then heat it up, before eating. I prefer to heat it up in a stock pot, rather than a microwave, because it doesn’t dry out the meat or potatoes.

We love freezing this recipe, but we do recommend eating it, soon after freezing it, for the best results.
