Rosemary Roasted Sweet Potatoes


I absolutely LOVE sweet potatoes. However, I always feel a little guilty eating them with marshmallows and brown sugar! 😉 This is a much healthier way to cook sweet potatoes and I think they taste just as great!

Rosemary Roasted Sweet Potatoes

This is a great recipe for sweet potatoes - and with no extra sugar or marshmallows involved! It's a great healthy side dish.

  • 3 large sweet potatoes (peeled and cut into half inch cubes)
  • 2 Tablespoons olive oil
  • 2 teaspoons pepper
  • 2 teaspoons salt
  • 1 1/2 teaspoons dried rosemary


  1. Preheat oven to 350 degrees.
  2. Line a large baking sheet (I use a 15 x 10 x 1 inch jelly roll pan) with aluminum foil and spray with non-stick cooking spray. Place diced potatoes on the foil-lined pan.
  3. Drizzle the olive oil over the potatoes, and then using your hands (or a spatula) toss the potatoes until they are completely coated.
  4. Sprinkle the pepper, salt, and rosemary over the potatoes, and once again use your hands to toss the potatoes until they are evenly distributed.
  5. Place pan in the oven and cook for 35-45 minutes, stirring every 10-15 minutes so that they are evenly cooked and don't get burned on one side.
  6. When finished baking, remove from oven and sprinkle with additional salt and pepper if desired.

  1. I could live off sweet potatoes - super addicting!!!! Did you use white sweet potatoes in this recipe? I've tried them once and not sure if I cooked them too long or what - but the texture was just too gummie and missing that "sweet" taste!
  2. We used the dark red sweet potatoes. I only used 1 1/2 tsp of black pepper and it was still WAY too spicy for my kids. I wondered if the 2 tsp or pepper for 3 sweet potatoes was a typo. I will try 3/4 tsp next time. The rosemary gave it a delicious flavor!!
