Raspberry Crumb Bars Recipe

These Raspberry Crumb Bars, are what give me life. They are the best dessert, and perfect for any time of year. They are easy to make and full of fruity flavor.

These bars are simple and easy (which are my requirements for a good recipe) using ingredients you have in your pantry.

I am usually a person who prefers chocolate, but these bars are amazing.

I have always been a sauce lover, and not one to love dry foods. I am the annoying person that asks for extra ranch, with my extra ranch at restaurants.

Nobody should have to eat dry food! That’s exactly how I feel with my dessert as well.

Every dessert needs a filling, glaze, frosting, or at least a scoop of ice cream with it. These Raspberry Crumb Bars are so easy to make and full of amazing flavor.

what other fruit would work with this recipe?

The thing I love about this recipe, is how versatile it is, and how easily you can change the flavor, with just a different fruit filling.

I personally cannot get enough raspberries in my mouth. I eat my raspberries, like I eat my popcorn; by the fistful.

These Raspberry Crumb Bars are so simple and so yummy. But if you don’t like raspberries as much as me, you could easily switch them out. Here is what I recommend:

  • Apricots
  • Strawberries
  • Blueberries
  • Blackberries
  • Rhubarb
  • Peaches
  • Pineapple (it would also be yummy with some coconut)
  • Banana’s

Really any of these fruits would work well. It’s such a simple recipe, and can be changed to fix your needs, or desires.

You could also mix fruit flavors. You could also double the filling, if you want your middle layer a little thicker.

Raspberry Crumb Bars Recipe

Ingredients

  • 1 cup sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup shortening
  • 1 egg
  • dash salt
  • dash ground cinnamon
  • Fruit filling:
  • 4 cups fresh raspberries (or frozen- just thaw them first)
  • 1/2 cup sugar
  • 3 teaspoons corn starch

Instructions

  1. Preheat oven to 375 degrees F.
  2. Spray a 9x13" baking pan with nonstick cooking spray.
  3. Combine sugar, flour, baking powder, salt, ground cinnamon, shortening, and egg. Dough will be crumbly. Pat half of the dough into the prepared pan.
  4. Combine the remaining 1/2 cup sugar, cornstarch and berries. Spread fruit mixture on top of the dough in the pan. Crumble the remaining dough over the tops of the berries.
  5. Bake for 35-45 minutes or until the top is slightly brown.

Notes

*or you could use a can raspberry pie filling - either one works!

  2. Hi; do you think apricots might work in this recipe? I have an apricot tree, and I freeze them to use throughout the year; this recipe looks intriguing. And, if it WOULD work, do you think it will taste good?? Thanks so much. (I mean do you think apricots would be a good substitute fruit for this dish lol.)

    I just tried this dessert for the first time over this past weekend...IT WAS AWESOME!! My whole family absolutely loved it and would even prefer it over raspberry pie :) It is super easy to make and I also added 3/4 cup old fashioned oats to the crumb top before I added it over berries, a great addition!!
