I had never heard of the Panera Bread Company until I moved to Missouri. We lived about 2 hours away from one but when we did get close to one…. you can bet that is where we went! The sandwiches taste amazing! When I saw that they posted some of their recipes online I was so excited to try one! Obviously I couldn’t use Panera Bread for my sandwich but I found some artisan bread (found at most grocery stores) that was pretty darn close. There is nothing like a warm sandwich on a cold day!
Serves: 4 people
PANERA BREAD COPYCAT RECIPE: SMOKED TURKEY AND PROVOLONE PANINI
There is nothing like a warm sandwich on a cold day!
Ingredients
- 1 loaf round artisan bread
- 3 Tablespoons light mayonnaise
- 2 teaspoons dijon mustard
- 5 ounces smoked provolone thinly sliced
- 8 ounces smoked turkey breast thinly sliced
- 1 ripe tomato thinly sliced
- 1 ounce baby spinach leaves (optional)
- cooking spray
Instructions
- Heat a grill, grill pan or panini press to medium heat. Cut the Artisan bread in half through the side to make two large rounds.
- Spread the mayonnaise and mustard over the top round of the bread. (I'm a huge miracle whip fan and I put it on both rounds of the bread) Arrange the provolone over the bottom round of bread. Layer the turkey, tomato, and spinach(optional) over the cheese. Top with the spread round of bread and coat sandwich all over with cooking spray.
- Grill the entire round sandwich over medium heat. Put a heavy weight, such as a heavy pan or foil-wrapped brick, over the sandwich to compress it. Or, if using a panini press, press down the lid. Cook until nicely marked by the grill and the cheese melts - about 3 to 5 minutes. Cut into 4 wedges and serve.

I don't know if your aware but Panera sells their bread. You can get any type of loaf that you can get a sandwich on. All you need to do is ask. Additionally, if you'd prefer a sandwich on a different kind of bread they can do that too. I usually pick up their whole grain so I can recreate their Smoked Turkey (using Hormel lunch meat) and a loaf is a fairly reasonable $3.50 or so. Yes, it's a little more than a store bought bread but you get bread that was made that morning that tastes deeelicious.
