Honestly, this is one of my favorite recipes using thin mint cookies. I make them up and bring them to a party and they are the first thing gone! Obviously, I am happy everyone loves them but sad I never have any to indulge with at home. 😉

Here are the few things you need to make these mint truffles:
No bake dessert ingredients:
- Package of Girl Scout Thin Mint Cookies (or Keebler Grasshopper cookies)
- Cream cheese
- Guittard’s Green Mint Chips (I found these at the grocery store but you can also find them HERE) or white chocolate chips and green food coloring.
TIPS AND TRICKS:
I have also seen mint cookies at Aldi’s that I have heard are very similar to the Girl Scout Cookies if there aren’t any being sold in your area. Or you could always make your own with this homemade thin mint cookies recipe from Sally’s baking addiction!
Also, I used the fat free version of cream cheese and it worked out well. You might even try with the chocolate cream cheese to see if it gives it an extra kick!

How to make thin mint cookie truffles:
To begin, use a food processor to crumble up the cookies (or a ziplock bag pounding them instead) until they are in little crumbs. You might need to divide the package in half and do two batches to get them all chopped up.
Then, you are going to add the thin mint cookie crumbs and softened cream cheese into the large mixing bowl and blend them together until they are well mixed and all the crumbs come together.
With the cookie and cream cheese mixture, roll little balls that are about 1 inch and place them on a baking sheet lined with wax paper. Do this until all of the dough has been used.
Then, place the baking sheet in the fridge for about 30 minutes so they harden up a little bit. This make them easier to dip in the chocolate and not fall apart.
Once the truffles have been in the fridge for the 30 minutes, begin melting the green mint chips in a microwave-safe bowl. You will heat the chips up in the microwave for 30-second increments. Be sure to stir between each session. Keep doing this until all of the chips are melted and are smooth.
After the green mint chips are melted and ready, roll each of the mint cookie balls in the melted chips until the ball is fully coated.
Then, using two forks, lift the truffle up carefully and hold it there for a minute allowing the excess mint chocolate to drip off before placing the ball back onto the wax paper. You will continue to do this step until all of the truffles are coated.
Now, stick the mint truffles back in the fridge for a couple of minutes or until the chocolate coating has hardened.
If you are interested in decorating the cookies as I did, you will need to melt about a ½ cup of white chocolate chips (or whatever flavor you prefer) the same way you did the green mint chips. Then pour the white chocolate into a small ziplock bag and cut a small corner of the bag.
Using the bag drizzle the white chocolate over the top of the green chocolate coating. You could also put some fun sprinkles or cookie crumbles on top as well!
Then simply return them to the fridge to harden back up.
These will do well in an airtight container in your fridge for 2-3 days so they are ready for your event when you need them (if they last that long).
