Mom’s Famous Marshmallow Brownies

These Famous Marshmallow Brownies are exactly what they are described as; FAMOUS. I guarantee these brownies will be one of the best brownies you will ever taste in this world. They are so creamy, chocolatey and delicious. You will love them.

Our mom is known all over town for making these amazing brownies.  They are literally my favorite brownies of all time.
The brownie base is homemade, which is amazing. If you have never tried making homemade brownies before, you are going to be shocked at how delicious and easy it is to make.
These Marshmallow Brownies were a childhood staple. Our mom would always make them for the neighbors, and we hated it when she would give them all away.
They are so good. Even the crusts, and that is coming from a crust hater, that will eat just about anything but the crust.

 

 

These homemade brownies are perfect for feeding a crowd, because you make them in a cookie sheet pan. Everyone who tastes these always says, “These are the best brownies EVER.”
I’d have to say I agree. They truly are the best brownies.

 

 

That marshmallow layer stays perfectly soft to break up the layers of chocolaty goodness. You melt them slightly and they taste like a perfectly roasted marshmallow.

 

 I would definitely recommend making these a few hours before serving to allow the frosting to set up completely. We don’t recommend frosting them until they are cool, just so the frosting can fully set up, and not sink or melt into the brownies.
This frosting is best served on cooled brownies (or in this case, cooled marshmallows.

could i use marshmallow cream instead?

We have only used mini marshmallows when we make this recipe. However, I am sure that marshmallow cream would work just as well, but we do recommend roasting them in the oven for a little bit, either way.

The texture of the marshmallows will be a little different, and they may not hold as well, but I am sure the flavor would still taste amazing. It may also take two cans of the marshmallow cream, to cover the brownies.

Chocolate Frosted Marshmallow Brownies

Ingredients

    Brownies:
  • 1 cup butter (softened)
  • 2 cups sugar
  • 1/3 cup cocoa powder
  • 4 eggs
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 (10 ounce) package mini marshmallows
  • Frosting:
  • 1/2 cup butter (softened)
  • 2-3 Tablespoons milk
  • 1 teaspoon vanilla extract
  • 4 Tablespoons cocoa powder
  • 3 cups powdered sugar

Instructions

    For the brownies:
  1. Preheat oven to 350 degrees F.
  2. Cream together butter, sugar and cocoa.
  3. Beat in eggs, one at a time, mixing after each one.
  4. Add flour, salt and vanilla and mix until well combined.
  5. Spray a baking sheet nonstick cooking spray.
  6. Spread brownie batter in prepared pan and bake for 22-25 minutes.
  7. Remove brownies from oven and spread marshmallows in an even layer on top. Return to oven for 3 minutes, until marshmallows are soft and puffy.
  8. Let cool completely.
  9. For the frosting:
  10. Mix all ingredients with a hand mixer until smooth.
  11. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.
  12. Let frosting set up before cutting.
