This is one of my favorite healthy recipes that pair perfectly with coconut rice (we made it last week, so good!) and the total time to make it only adds up to a few minutes of prep.
You could even make this slow cooker mango salsa chicken recipe into to some tasty chicken tacos or lettuce wraps! It is such a great recipe that you can use it in different ways to mix it up yet have a simple meal.

Ingredients used to make Slow Cooker Mango Chicken:
- Boneless, skinless chicken breasts (mine were frozen you can also use skinless chicken thighs as well)
- Corn drained
- Black beans drained and rinsed
- Mango salsa
- Cumin or to taste
- Lemon pepper or to taste
How to make Slow Cooker Mango Chicken:
- Put chicken breasts in slow cooker.
- Mix all other ingredients in a separate bowl.
- Pour over chicken breasts and cook on high for 4-6 hours.
- Shred chicken with two forks in the crock pot and serve over rice.
- Garnish with cilantro, if desired.
Do I need to use mango salsa?
Honestly, if you do not want to use either a fresh mango salsa or one from the grocery store, you definitely don’t have to. It is just a great way to add in some flavor and my favorite way to season the chicken for this crock pot mango salsa chicken recipe.
However, if you prefer, you can also either pick your salsa to put in with the cooking chicken. Some also say that peach salsa is great, or you can make it more spicy flavors by doing more of a jalapeno salsa but then add in some ripe mango as well.
