Healthy Meals Monday: Baked Mexican Fish

I'm just going to be completely honest, I am not a fish person at all. However, I tried this Baked Mexican Fish, and it literally tasted like chicken. My kids ate it, and my husband who loves fish, obviously loved this recipe (even though it didn't even taste like fish, maybe it was just a mental thing?). It was so easy, healthy, and delicious. You'll love it.

We are MOVING in one week and I’m trying to use all the halibut in our freezer so we don’t have to bring it with us.
I was sick of all our halibut recipes so I decided to try a new one. When my husband came home he yelled… “It smells so good.”
I always know that is a good sign.  One thing I love about Halibut is that if you cook it the right way it tastes like chicken instead of fish. My kids loved this “chicken” meal.
It is full of flavor, and is also extremely healthy for you. If you need a quick and healthy meal, we highly recommend this Baked Mexican Fish.

Fish can be a tricky recipe, to pair sides with, however, we have a few ideas your family will love. They are simple and come together quickly, because who has time for side dishes, after making a main dish?

Here are a few sides, we recommend for this recipe:

Asparagus: This vegetable pairs nicely with any kind of fish. Whether you cook them together or separate, they taste so yummy together.

Baked Mexican Fish

Ingredients

  • 1 1/2 pounds halibut (or cod)
  • 1 cup salsa
  • 1 cup shredded Cheddar cheese
  • 1/2 cup corn chips (coarsely crushed)

Instructions

  1. Preheat oven to 400 degrees. Lightly grease a 9 x 13 inch baking dish.
  2. Rinse fish fillets under cold water, and pat dry with paper towels.
  3. Lay fillets side by side in the prepared baking dish.
  4. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
  5. Bake uncovered in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork.    

Notes

It is delicious served with tortillas, sliced avocado, sour cream, and black beans.
