Skinny Coconut Truffles

These Skinny Coconut Truffles are the perfect healthy candy, to satisfy your sweet tooth, without ruining your diet. They are so easy to make, and taste amazing. You won't even believe how healthy they are, when you taste them, because they taste like candy.

Eating healthy isn’t easy. I have the biggest sweet tooth, and I need chocolate in my life.

These Healthy Dark Chocolate Coconut Truffles are quick, easy, delicious, and satisfy my sweet tooth without making me feel guilty.

If you are trying to eat healthy, or just looking for a healthy snack, these are perfect.

They are full of flavor, and taste like an Almond Joy. I even like to press an almond into the soft chocolate of my truffles, because I love the sweet and savory combination.

These candies come together in a matter of seconds. If you are looking for a quick dessert, to serve a crowd, this recipe easily doubles, and is always a family favorite.

what can i use in place of almonds?

If you are not an almond fan, you could easily replace it with a cashew, peanut, walnut, pecan, white chocolate drizzle, caramel drizzle, etc.

how to properly dip your truffles in chocolate

-First things first. Your truffles have to be frozen. If they are not frozen, they will be mis-shaped, and they will fall apart in the warm, melted chocolate.

Then your white chocolate will have Oreo truffle smears in it. I have learned from personal experience.

-Get your chocolate. I used Hershey’s milk chocolate chips, but you could also use a bark.

I microwaved mine for 30 second intervals, stirring each time, until smooth.

Don’t let any moisture get into your melted chocolate or it will get a weird texture, and won’t work for dipping.

-For dipping, one of our tricks is to use a plastic fork and break off the middle tines. Just leaving the two on each end. It kind of looks like a hand doing a rock on sign.

-Drop the frozen ball into the white chocolate and then carefully lift out with the fork invention, tapping the side of the bowl to let the excess chocolate drip off.

-Set them on a cookie sheet covered in wax paper. Press in the almond, and let it set up. I usually put mine in the fridge, because I think they are delicious cold.

Skinny Coconut Truffles

Ingredients

  • 2 1/2 cups sweetened coconut
  • 1 tablespoon honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla
  • 1 1/2 cup chocolate chips (melted)
  • 18 almonds - optional

Instructions

  1. In a blender or food processor, crush the coconut until it is almost a thick powder.
  2. Once the coconut is blended, put it in a bowl and add honey, coconut oil, and vanilla.
  3. Stir until well-combined.
  4. Shape the coconut mixture into balls and place on an aluminum foil cookie sheet.
  5. Once all the balls are rolled and on the cookie sheet, freeze for 30 minutes.
  6. Melt the chocolate chips in the microwave stirring every 30 seconds until smooth.
  7. Dip the partly frozen coconut balls into chocolate.
  8. I used two forks to do the dipping.
  9. Place the chocolate covered coconut balls onto the aluminum foil covered cookie sheet.
  10. If you choose to top with almonds, lightly press them into the chocolate before it hardens.
  11. Let the chocolate set up, and eat when ready.
