Grilled Huli Huli Chicken Recipe

The pineapple juice, brown sugar, and all the other amazing spices mixed together make a sweet and tangy flavor you won’t forget! This grilled Huli Huli chicken recipe is one I love making over and over again!

I cannot wait for summer when the grill gets pulled out (even though you can make this indoors) and have a relaxing Saturday BBQ with the family. This healthy grilled chicken recipe is always the first thing we make and for all the holidays! 

The Hawaiian chicken makes a lasting impression. I can even remember the first time I’ve tried it and haven’t gone a summer without it since. Even our kids love this recipe.

Best chicken marinade ingredients:

  1. Pineapple juice
  2. Brown sugar
  3. Ketchup
  4. Soy sauce

Get ready, it’s time to make this delicious Hawaiian grilled chicken!

To begin making this make sure you have ample time to put it together as you will need to do the first two steps at least 8 hours before you need to cook the chicken on the grill giving it plenty of time to absorb all of the fantastic flavors of the marinade. 

To make the marinade, take a small bowl and add in the pineapple juice, brown sugar, ketchup, soy sauce, ground ginger, and minced garlic. Mix it all together until everything is well combined. 

Then, take a large ziplock bag and pour the marinade in it. 

Next, add in the chicken and close the bag trying to get rid of most of the air from the bag. Move the chicken around in the bag to get everything covered in the marinade.

Now place the bag of chicken in the fridge and let it marinate for at least 8 hours or even overnight. 

Once the time has passed, remove the chicken from the bag and discard the rest of the marinade. 

Then using a preheated grill, grill the chicken over medium-high heat for 6-8 minutes on each side or until the internal temperature of the chicken is over 165 degrees at the thickest part of the chicken. 

Once the chicken is done, remove it from the grill and serve it immediately!

PRO TIP: If you aren’t up for grilling but don’t want to miss out on this awesome recipe, you can also bake this in the oven at 400 until fully cooked through, and the juices run clear. It will be around 25-30 minutes.

  • 1/2 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/3 cup low-sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 2 teaspoons minced garlic
  • 6 boneless skinless chicken breasts


  1. In a mixing bowl, whisk together pineapple juice, brown sugar, ketchup, soy sauce, ginger and garlic.
  2. Pour marinade into a large resealable plastic bag and add chicken.
  3. Seal bag and place in the fridge for at least 4 hours (or overnight).
  4. Remove bag from fridge, drain and discard marinade from chicken.
  5. Grill chicken over medium-high heat for 6-8 minutes on each side or until internal temperature of chicken reaches 165 degrees F.

  • 1/2 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup ketchup

  • 2 lbs boneless, skinless chicken breasts or thighs


  1. In a small bowl, mix the first six ingredients.
  2. Pour marinade in a large resealable plastic bag and add chicken. Seal bags and place in the fridge for at least 8 hours or overnight.
  3. Remove bag from fridge, drain and discard marinade from chicken.
  4. Grill chicken over medium high heat for 6-8 minutes on each side or until internal temperature of chicken reaches 165 degrees F.
  5. We love to serve ours with grilled pineapple on the side!

    We tried it and loved it! Every year we spend 2 weeks in Maui and for the first time in 17 years , we couldn’t go because of the pandemic. So we bought a commercial shave ice machine and made Hulu Hulu chicken and fried rice for July 4th! It’s not Maui but it sure tastes good! Thank you!!!
