As soon as spring rolls around, I am always looking for new fresh and delicious desserts. I have been craving lemon lately, so it seemed only natural to make a lemon cheesecake! This cheesecake is so smooth with the perfect hint of lemon! Easy Lemon Cheesecake Recipe with Wholesome!
Ingredients
Crust:
- 1 cup graham cracker crumbs
- 2 Tablespoons brown sugar
- 2 Tablespoons unsalted butter melted
Filling:
- 2 (8 ounce) packages cream cheese
- ½ cup Wholesome!® Organic Blue Agave Sweetener
- ½ cup sour cream
- 3 eggs lightly beaten
- 2 Tablespoons lemon juice
- 1 teaspoon grated lemon zest
- 1 teaspoon vanilla extract
Instructions
Crust:
- Preheat the oven to 400 degrees F.
- Spray an 8-inch springform pan with nonstick cooking spray.
- Combine graham cracker crumbs, brown sugar, and melted butter and press mixture into bottom of pan.
- Bake 7-10 minutes, or until golden brown.
Filling:
- Keep the oven at 400 degrees F.
- In a medium bowl combine cream cheese and agave until smooth.
- Blend in sour cream.
- Stir in beaten eggs, one third at a time.
- Stir in lemon juice, zest, and vanilla until well combined.
- Pour into baked crust and place in oven. Immediately turn heat down to 300 degrees F and bake for one hour or until cake begins to rise on the sides.
- Turn oven off. Open oven door and let cake sit in oven for another 30 minutes.
- Let cool and serve.
