Diet Lemon Raspberry Cake Recipe

I am all about dessert, but when it's pretty healthy, I love it even more. This Diet Lemon Raspberry Cake is so easy to make and full of flavor. It comes together quickly and tastes absolutely amazing. You will love this recipe.

I have always been a big cake lover.  I wanted to have my cake and eat it too, all while saving a few calories.
This one is so easy to make and the perfect combination of lemon and raspberry. I am a huge lemon fan, and this cake is just that much sweeter with the hint of raspberry to it.
This makes the perfect spring or summer dessert. You can’t go wrong with this light fruity dessert. Even my kids, who are picky dessert eaters (I know, I didn’t know it could be possible either) constantly ask me to make this one.
It comes together quickly, only requires a few simple ingredients, and tastes amazing. You will love this Diet Lemon Raspberry Cake.

what other fruit could i use besides raspberries?

I am the biggest raspberry fan. Next to fresh peaches, they are definitely my favorite.

I get that not everyone loves raspberries as much as I do (actually I don’t really get it…), so if this is the case, here are a few other fruits that would taste amazing with this recipe:

  • Blueberries
  • Blackberries
  • Strawberries
  • Cherries
  • Pineapple

These are the ones we definitely recommend for this recipe. You could also just do plain lemon, and not add any raspberries or any other fruit to it, if you prefer it plain.

do i have to use diet 7 up?

You definitely don’t have to use Diet 7 Up for this recipe. I like it sugar free and light, so I fell less guilty, but you could easily switch out the diet, for regular.

Diet Lemon Raspberry Cake Recipe

Ingredients

  • 1 (15.25 ounce) box lemon cake mix
  • 2 egg whites
  • 1 1/4 cup Sprite Zero or Diet 7UP
  • 1 cup fresh raspberries (plus more for garnish)

Instructions

  1. Preheat oven to 350 degrees.  In a large mixing bowl, combine cake mix, egg whites and diet soda.  Fold in raspberries.  Pour batter into a greased 9x13 inch baking pan.  Bake for 30 minutes.  Top with light Cool Whip and garnish with raspberries.

  1. This looks so good I couldn't wait to try it. So I just put it in the oven. I made a few adjustments - using egg white powder instead of eggs because I just can't stand to waste yolks, using FD Raspberries and regular 7Up, not diet. Will be sharing on my blog next week. It's for dinner with friends tomorrow so I have to wait to taste it :(
