Do you ever have a super busy week, we’ve got you covered with this amazing Chicken Taco Casserole. We had that kind of week. Our sweet sister Kristen was in a terrible car accident with her family. Here in Utah we had freezing rain, which immediately turns to ice when it hits the ground. All the freeways turned into ice skating rinks and it makes driving so scary. Kristen and her family were headed out to visit us when a semi-truck went out of his lane. This caused them to swerve to miss hitting him. This sent them spinning into the side of the semi-truck. Their car was totaled and they had to rip off the door to pull Kristen out. Her arm is in a sling from injuring her elbow. But other than that, the family is fine. We are so grateful that they are all okay.
An accident like this quickly puts everything into perspective on the importance of families. We held our kids a little tighter tonight and took our time with bedtime stories. Slow down and take time for your family – including family dinner. It’s a great time to catch up with each other and listen to each other and how their day went.
And this Chicken Taco Casserole is the perfect dinner as you have a great family conversation (how did you like that segway into the recipe?!).
Recipe Ingredient Notes
- Cream of Chicken Soup
- Sour Cream
- Diced Tomatoes with Green Chilies
- Black Beans
- Taco Seasoning Mix
- Chicken Breasts
- Tortilla Chips
- Shredded Cheddar Cheese
Equipment Needed
- 9 x 13 inch pan (THIS is our favorite)
- Mixing Bowls (We like THIS set with a non slip base)
- Mixing Spoon



How to Make Chicken Taco Casserole
- Pre-heat oven to 350 degrees. Lightly grease a 9 x 13 inch pan.
- In a large bowl combine the chicken soup, sour cream, diced tomatoes, black beans, taco seasoning, and chicken. Then set aside.
- Crush the chips, and spread half of them on the bottom of the pan. (You can crush them with your hands or a rolling pin.)
- Spread half of the chicken mixture over the crushed tortillas. Top with 1 cup of cheese. Repeat layers.
- Bake for 30 minutes until bubbly and cheese is barely starting to brown.

Chicken Taco Casserole Recipe
Ingredients
- 21.5 ounces cream of chicken soup, 2 (10.75 oz cans)
- 1 ½ cups sour cream
- 14 ounces diced tomatoes with green chilis, 1 can, (we used Ro-tel)
- 15 ounces black beans, 1 can (rinsed and drained)
- 1 ounce taco seasoning, 1 packet
- 4 boneless, skinless chicken breasts, cooked and shredded
- 13 ounces tortilla chips, 1 bag
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat oven to 350℉.
- Lightly grease a 9 x 13 inch pan.
- In a large bowl, combine the chicken soup, sour cream, diced tomatoes, black beans, taco seasoning and chicken. Set aside.
- Crush chips (I just crush them with my hands) and spread half of them on the bottom of the pan

Wow! That was a scary accident. I am so glad that everyone is OK (aside from Kristen’s injured elbow). It is really amazing that there was only a minor injury with the way the car looked. Oh my gosh, I am so glad her and her family are okay. The roads last Thursday were the iciest roads I have ever driven on here in Utah. Just from watching the news and seeing how many accidents and how many people were in the hospital from falling on the ice shows you how bad the roads were that day/night. I am stationed in Okinawa with my husband and our off-base house does not have an oven nor does it have hookups for an American oven. Do you think this recipe would work if I made it in an aluminum foil pan and cooked it on medium-high heat in a covered grill for about 30 mins? Also, glad to hear your sister is okay!!!

I was rear-ended last winter by a teenage driver, my car was totalled and my lower right leg and ankle were badly fractured. I’m now the owner of a number of screws and plates … not great, BUT I’m not in a wheelchair anymore – or worse. It’s been a long recovery, I still can’t walk a long way or do some things I used to, but I’m determined to get back as far as can!!

We have never frozen it, but the tortilla chips would probably go soggy.
I just saw that I don’t have two cans of cream of chicken soup. I have one cream of chicken and mushroom. Anything I can use in the place of the soup?
I would think that one can of cream of mushroom and one can of cream of chicken would work. The taste would be altered a little.

I made this casserole tonight, and it was AWESOME. This is an instant “Keeper” for me. I am on vacation with my 4 sisters, we take a week together every year, it’s called ‘sister week’. I made the recipe just as written, and laid out toppings like for them to put what they wanted on top like: Salsa, extra sour cream, green onions, cilantro. I think black olives would have been good too. Thank you for a delicious recipe.

I chanced upon your recipe and had to give it a try. Although it was very tasty I was a little disappointed at the “soupy” consistency. Even after allowing my casserole to cool it did not set they way your picture suggest but it makes an awesome chip dip.
For the beans there should be no juice in the beans when mixing withthe others items

Thank God your sister and family are ok. We had a horrible accident 35 yrs. ago. Our son was just 8. days old. We were both thrown out of our pickup. The truck landed on me and baby carrier was upside under one of the tires. On impact he slid out of the top and thrown into a snow bank. When the police finally found him he just had a tiny scratch on his forehead. I had a crushed arm and broken ribs. Three surgeries over the next year. Still have problems from that wreck and our son does not like cold weather but we were so lucky. Thankful to our Heavenly Father everyday. I will definitely try this receipe.

I made this lastnight, and since our local grocery store’s chicken just really didn’t look good, I substituted canned chicken. It came out GREAT!
If you didn’t drain the rotel, that’s why it was runny. I drained it before the whole mixing process, and it cane out GREAT!

This recipe? I know cooking it in a crock pot all day would do it but is there any other way to do it and much faster?
We don’t do a lot of casseroles around here but this one i’ve made twice and we are big fans. I used half light sour cream and half greek yogurt, made my own taco seasoning and before serving put some avocado slices and green onions on top. yum! Husband is a fan too which is saying something as he is one picky eater!

I am not a big fan of cream of chicken soup. Can recipe be cooked with just one can of soup? It looks like there is more than enough cream with soup and sour cream.
We have made it with 2 cans of soup. One can might make it too dry.
Weird. I just made this dish and didn’t drain the tomatoes. It wasn’t soupy at all.
Made this last night (minus the black beans) and everyone loved it! My kids are very picky eaters but my 8 year old said it was the best meal I’ve ever made and after my 4 year old initially said “yuck” he ended up eating 2 full plates! Big success!

You can totally add ground chicken in this recipe. Cook your chicken and then add it in as you would the cooked and shredded chicken.

This recipe was wonderful. One of the best taco casseroles I’ve had (and I make it alot). It was really easy to put together & the chips really threw it over the edge!
Taco casserole was so good. I changed it up a little. Used 2 cans Roltel 10 oz each. Put in 15 oz corn drained with black beans drained. Added more taco seasoning. Not runny.Used a rotisserie chicken. easy peasy. tasted amazing!.

Are the tortilla chips supposed to be crunchy? I cooked it for 22 minutes because cheese was bubbly and brown.
They will soften as the soupy mixture continues to soak into the crushed chips.

I want to try this recipe, but my boyfriend hates sour cream, mayo and other what he called “mayo adjacent” things. Can I make this without the sour cream (I’d put it on the side). Will the chicken come out too dry?
Would your boyfriend be adverse to using plain greek yogurt? If so, I would try adding a second can of cream of chicken soup to replace it. We haven’t tried these substitutions so I can’t guarantee the results but it’s worth a try!
I have made this the past few years for Thanksgiving and it is a huge hit. I leave out the chips and just use it as a dip and substitute homemade gluten free chicken soup.

How many lbs or cups of chicken meat? It seems like the chicken breast’s at our store are either really large or kinda small. So 4 chicken breast’s could be alot or a little.
You can aim for about 4 cups of shredded chicken breasts – that could be 3-4 breasts depending on size, but you can’t really go wrong in this recipe if you have a little more or less

Made this once and absolutely loved it, and the leftovers. I rubbed fajita spice on the breasts and grilled them. Otherwise followed exactly. Used Cholula medium taco seasoning packet. Easy to make and really delicious. Can’t wait to repeat.
Made this recipe tonight. Had a can of corn that needed used up, so I added it to the casserole and it turned out delicious. The only thing is it turned out slightly soupy. I even let it rest for 10 min. I also drained all the cans real good too so there was no added liquid. Not sure what I did wrong.
