Barbecue Pork Baked Sweet Potatoes

 

Just when you though baked potatoes couldn’t get any better, we added sweet BBQ pork, switched it out for a sweet potato, and topped it with melted cheese. Just a small slice of heaven, that you don’t have to feel guilty about! We’re starting January off strong with our favorite healthy recipes and we know you will love them just as much as we do!

First things first, the baked potato. Have you ever tried cooking a sweet potato in the microwave? Once you try it you will never go back! Start by piercing the potato with a fork a few times, then wrap with a damp paper towel. Microwave on high for about 7 minutes, and you’ll have a perfect potato every single time!

Slice your potato in half and top with some of the delicious barbecue pork. Top with green onions, mozzarella cheese, and a little more barbecue sauce. Broil your potato for about 3 minutes or until the cheese is melted!

Ingredients

  • 2-3 pound pork shoulder butt roast (you can use bone-in)
  • 2 Tablespoons paprika
  • 1/2 Tablespoons salt
  • 1/2 Tablespoons pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard
  • 1/4 cup liquid smoke
  • 1 (16-20 oz) bottle of your favorite BBQ sauce
  • 4 sweet potatoes
  • 1 cup mozzarella cheese
  • 1 bunch green onions, chopped

Instructions

  1. Spray the inside of slow cooker with non-stick cooking spray (or use a slow cooker liner).
  2. Combine paprika, salt, pepper, garlic powder, mustard and liquid smoke in a small bowl.
  3. Rub all over the roast, covering all sides. (Optional: poke your roast with a large fork a couple of times to let the flavors really soak in).
  4. Place lid on slow cooker and bake on low for 8-10 hours (or high 5-6 hours).
  5. Shred meat when finished and add bottle of BBQ sauce.
  6. To cook potatoes, dampen a paper towel and wrap potato, covering all sides and ends.
  7. Microwave each potato for 3 minutes, stop the microwave, rotate potatoes, and microwave again for 3 minutes.
  8. Depending on thickness of your potato, microwave again until soft if needed.
  9. Cut potato in half length wise and fill with meat.
  10. Top with green onions and cheese.
  11. Broil potatoes on high for 2-3 minutes until cheese melts and begins to brown.
  12. Enjoy! We topped ours with sour cream and more BBQ sauce.
