Lemon Bars

We made it to April, and these Lemon Bars are the perfect Spring dessert.  They are bursting with lemon flavor!  Your family will love these and they are so easy to make!  They are perfect for a baby or bridal shower.  You can’t resist the taste of a thick and chewy lemon bar!

  • Crust:
  • 1 cup butter, softened to room temp
  • 1/2 cup sugar
  • 2 cups flour
  • 1/4 teaspoon salt
  • Filling:
  • 3 cups sugar
  • 6 large eggs, beaten
  • lemon zest from 1 lemon
  • 1 cup lemon juice, fresh or bottled
  • 1 cup flour
  • 1/2 cup powdered sugar


  1. Heat oven to 350 degrees and lightly grease a 9 x 13 inch glass pan.
  2. Cream together softened butter and sugar. Then add in flour and salt and mix until blended.
  3. Press into the bottom of the pan and spread to the edge going up the side of the pan about 1/2 inch. Bake for about 15 minutes or until lightly browned.
  4. While the crust is cooking, mix together sugar, eggs, lemon zest, lemon juice, and flour. Pour over the hot crust and bake for about 25 to 30 minutes or until set. Remove from oven and dust with powdered sugar.
  5. Cool completely
