Almond Crusted Chicken

I tried this chicken a long time ago when my sweet neighbor made it. I was in LOVE with the taste, but I forgot to get the recipe from her when I moved! I finally combined a few of our recipes together and came up with this almond chicken, which is as close as I could get! I just love how easy it is, and the almonds add the perfect crunch to the crust!

  • 4 boneless, skinless chicken breasts (about 1 1/2 lbs of chicken)
  • 3/4 cup bread crumbs (I used plain, but you could use italian)
  • 1 cup sliced almonds
  • salt and pepper to taste
  • 2 large eggs, beaten
  • 1/2 cup butter


  1. Preheat oven to 375 degrees.
  2. In a small bowl, mix together bread crumbs, almonds, and salt and pepper.
  3. Take each piece of chicken and dip it in the beaten eggs, and then dredge it through the almond mixture, coating each piece completely. Place each coated chicken breast in a 9x13" pan.
  4. Cut the butter up into small pieces and put them over the top of the chicken breasts.
  5. Bake for 30-35 minutes, until the chicken is cooked through.
