Pesto Potatoes Recipe

One of my favorite sites to find new recipes is Favorite Family Recipes!  They are a four sisters who share family recipes that are easy to prepare and so delicious.  They even have a cookbook!  I was in a side dish rut and knew they would have something my family would love.

Ingredients

  • 5-6 medium russet potatoes
  • 1 (10 ounce) jar Pesto sauce
  • 3/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 450 degrees. 
  2. Scrub (but don't peel) potatoes and cut into large cubes.  Place cut potatoes in a large Ziploc bag. 
  3. Add  pesto sauce to the bag and shake until all of the potatoes are coated. Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese. 
  4. Bake for 25-30 minutes, or until potatoes are golden.

    These got rave reviews from everyone!! I used a lot more homemade pesto and I didn't skimp on the parmigiana reggiano (closer to a cup or more). I also let them marinate in the pesto for close to an hour before baking. Absolutely scrumptious! TY
