DIPPED PEANUT BUTTER SANDWICH COOKIES RECIPE
These cookies are soft and moist. They look complicated, but are actually so easy to make.
Ingredients
Peanut Butter Cookies:
- 1 cup margarine (Softened at room temp)
- 1 cup brown sugar
- 1 cup white granulated sugar
- 1 cup peanut butter
- 2 eggs
- 2½ cups flour
- 1½ teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
Peanut Butter Filling:
- ¾ cup peanut butter
- ¼ cup powdered sugar
- 2 teaspoons butter melted
- 1 teaspoon milk
Chocolate Dip:
- 1 cup milk chocolate chips
- 4 teaspoons vegetable oil
Instructions
Peanut Butter Cookies:
- In a mixing bowl combine softened margarine, eggs, brown sugar, white sugar, and peanut butter. Then stir in flour, baking soda, baking powder, and salt. Roll into 1 inch balls and place on ungreased baking sheet. Make criss cross marks with a fork. Bake at 350 degrees for 8 to 9 minutes. Cool completely.
Peanut Butter Filling:
- Spread 1 tablespoon filling on the flat side of a cookie and then top with another cookie to make a sandwich.
Chocolate Dip:
- Melt chocolate chips and oil in a microwave safe bowl for about 1 minute. Stir until melted and smooth. Dip cookies halfway into the chocolate. Let the excess chocolate drip off. Place onto a cookie sheet lined with waxed paper. Drizzle with remaining chocolate. Refrigerate to set.
