Low Fat Mexican Manicotti



Low Fat Mexican Manicotti
2 cans fat free refried beans
1 pkg taco seasoning
14 to 16 manicotti shells uncooked (whole wheat if you can find them)
2 (16 oz) bottles/cans green taco sauce
1 cup low fat mozzarella grated cheese

Stuff mixture into uncooked shells. I use a plastic baggie with a cut corner. Then squeeze the mixture in both sides of the manicotti shell.

Lay stuffed shells into a 9X13 pan. Mix the green taco sauce with 1 bottle of water. (Use one of the bottles the sauce came in.) Pour sauce over manicotti, cover with foil, and bake at 350 degrees for 1 hour. Remove from heat and sprinkle with cheese. Put back in oven until cheese is melted without the foil this time.

Garnish with green onions, olives, tomatoes, and cut up lettuce.

Valentine Brownie Pizza

 

We are huge pizza lovers and have passed this pizza loving gene on to our kids!  When we thought it couldn’t get any better, we found pizza in a brownie form! Are you kidding…shut the front door!!  Our 2 favorite foods in one recipe!  :)  Doesn’t get any better than this!  You will love this fun brownie pizza for your Valentine parties.  Get your kids involved  by letting them add their own pizza toppings.
 
Valentine Brownie Pizza Recipe
 
The brownie crust is our Fudgy Brownie Recipe.
 
Brownie Pizza Crust Ingredients:
8 Tablespoons cocoa powder
1 cup (2 sticks) margarine
2 cups granulated sugar
4 eggs
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
pinch of salt
 
Directions:
Grease 2 pizza pans (12 or 13 inch pans).  Preheat oven to 325 degrees.  Melt margarine. Stir in cocoa.  Mix sugar and eggs in mixing bowl.  Stir in margarine and cocoa.  Add vanilla, flour, and salt. Spoon half of the batter into  the greased pizza pan.  This recipe makes 2 brownie pizzas.  Cook one pizza at a time.  Bake 17 minutes.  Let cool completely.
 
Frosting Ingredients:
1 pound powdered sugar
1/2 cup (1 stick) margarine (room temperature)
1 teaspoon vanilla
2 Tablespoons milk
Red food coloring
 
Directions:
Combine frosting ingredients and mix well until smooth. Add enough food coloring to get your frosting as dark as you want it for your pizza sauce. Frost cooled pizza. Don’t go all the way to the edge so that the brownie will show for your pizza crust. This will frost both pizzas.
 
Pizza Toppings:
4 ounces almond bark (shredded)
Mini Oreos
peanuts
peanut butter chips
M & M’s
 
Directions:
Shred your almond bark with a cheese grater to look like mozzarella cheese.  Sprinkle it over the frosting and then add your pizza toppings. Add any other fun toppings to your liking!

10 Moving Tips and Tricks

Moving can be very stressful because there are so many things to do and remember.  Hopefully this post will  make your move a little easier as you get ready to start your new adventure!

 

Boxes

You will need a LOT of boxes.  You will easily pay $1 to $5 per box. In this last move, I had over 30 boxes. That would be a big chunk of money if I didn’t plan ahead.  Some people like to buy brand new boxes and I’m not saying that is bad, I personally didn’t want to spend over $100 for boxes.  Start collecting boxes about 6 months before you move.  Ask your neighbors, friends for any extra boxes they may have setting around.  You could also check out Craigslist for some cheap or free boxes.  Grocery stores, book stores or other stores will give their boxes away.  All you have to do is ask.

(Just a random tip, storing your things in bins are great, but they are not very good for moving.  They do not stack well when they are heavy and can easily crack in the move.)

Wants and Needs

My rule is that if I haven’t used it in the last 2 years then I probably won’t use it again.  You could make a little money by selling your items on Craigslist or by having a Garage Sale.  I starting going through my things about 2 months before we left so I would have plenty of time to sell items.

 Address To Do List

One thing I don’t love about moving is that you have to change your address on EVERYTHING!  Make sure you have the correct address and let the post office know. Then notify those involved through bills and payments.  Be sure to include banks, insurance companies, doctors, dentists, utilites, magazines, newspapers.

 

Find a Moving Company

Whether you are using a truck and driving it yourself, or having a company do it for you,  find something that fits for you at least 1 month before you leave.

I consider myself an experienced mover. My little family has moved 7 times to 4 states in the last 8 years. We recently moved across the country and this time we used a company called UPack. It has been our best experience so far. We used their Relocube Moving Containers and they worked out great! You can read my experience with Upack HERE.

Know the Date

You will need to know the exact date that you are planning on moving not only for your moving company, but also so you can let your family and friends know.  The more moving help you have, the faster it will go!

 

Take Pictures

Do you like the way your house looks right now?  Be sure to take pictures of where your picture frames are hanging and your clock in front of your candle sticks sit.  You will be surprised how much you forget where your things were before you moved.

Sticker System

I call it the sticker system but you can do what works best for you.  As you start packing, be sure to label your boxes with the room they go in and what is in the box. I labeled mine with stickers. The Kitchen was red, the girls room was pink, etc. That way when you unload you know which room that box will go in.

Also be sure to label all glass, and other valuables as FRAGILE.  Write it big so everyone can see it.

 

Grocery Shop
Grocery shop about 2 weeks before you move.  Make a grocery list from the items currently in your house so you you can use it up.  This way you won’t have to pack as much food.  About 4 days before you leave, you can get freezer meals such as a frozen lasagna. You won’t need anything other than your oven and some plastic plates and forks.  This way you can pack up everything else in your kitchen.

 

Pack a Suitcase

As your moving day gets closer,  I would highly suggest packing a suitcase. Pack all the things you will need in the next week, clothes, underwear, make up, shampoo, etc.  That way you can pack everything in your house, including your bathrooms.  Also when you get to your new place you will know where all your necessities are. 

Packing Tips

1. To save a little money, use newspapers, towels, blankets and clothes to pack plates and other fragile items instead of buying bubble wrap.

2.  Leave your clothes on the hanger and put a garbage bag over them from the bottom. Then use a rubber band to secure all of your hangers together while tying the garbage bag to the hangers.

3. For your drawers,  Leave your clothes in them! Take the drawers out when you move the dresser and put the drawers back in when it is in the moving truck.

4. Pack and clean your refrigerator last. If possible, bring your condiments with you in a cooler.  Getting rid of them will cost you a chunk of money to replace.  Even if you are on the road for a few days, you can always add more ice.

5. Pack beds and sheets close to the front of your truck or pods.  Set up your beds right when you get there so you will have a place to sleep that night.

6. Plastic Bags for extra clothes, blankets, pillows, and towels. Bags are perfect for filling the extra holes when packing up your truck!
