Caprese Toast

 

Today we have teamed up with Harper’s Homemade to bring you this delicious recipe. Thank you for letting us share our favorite things with you! All opinions are 100% my own.

When it comes to bread, I am super picky with that I feed my kids. I am always checking the ingredients label to make sure it’s made with wholesome ingredients that I can pronounce. When I heard about Harper’s Homemade bread, I was blown away that it only had 5 ingredients and that it wasn’t loaded with preservatives and chemicals. Also, it literally tastes amazing – as the name states, it tastes like homemade bread! This was the first time that I had ever seen a bread like this at the grocery store.

When I shared this find on our Facebook page, it resonated with so many of you. We are all searching for healthy foods to feed our family that won’t break the bank and this bread falls perfectly in that category! This bread is also locally grown in Idaho (the wheat is from a family-owned farm!) and as I learned more about the company, I learned that their purpose is all about giving back. They currently make more bread than they can sell purposely – they have partnered with local food banks, community centers, and shelters to donate their extra bread to. This company is truly amazing.

I wanted to share one of the recipes that I make with Harper’s Homemade bread . . . this makes the perfect appetizer or even lunch!

Ingredients

  • 6 slices whole wheat bread (I used Harper's Homemade)
  • 2 cloves garlic, peeled
  • 12 ounces fresh mozzarella cheese, sliced 1/4 inch thick
  • 1/3 cup fresh basil leaves
  • 1 cup cherry tomatoes, halved
  • 3 Tablespoons olive oil
  • 3 Tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Toast bread slices and rub one side of each slice of bread with garlic.
  2. Place a 1-2 pieces of mozzarella cheese on each piece of toast, then top with some tomatoes and 1-2 basil leaves.
  3. Drizzle with olive oil, balsamic glaze, and salt and pepper as desired.
