Almond Butter Granola


I have always loved our honey granola, but lately we have been on a MAJOR almond butter kick. I decided to switch it up and make it with almond butter, and I added in some coconut chips and chopped almond. The good news is, it turned out great! The bad news is, I can’t stop eating it! It tastes great in a yogurt bowl (pictured below), paired with almond milk, or just eaten plain with a spoon!

Ingredients

  • 2 cups quick oats
  • 1/2 cup chopped almonds
  • 1/2 cup coconut chips
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 2 teaspoons honey
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 325 degrees.
  2. In a medium bowl, mix together oats, almonds, coconut chips, salt and cinnamon and set aside.
  3. In a saucepan over medium heat, mix together almond butter, coconut oil, and honey until smooth. Remove from heat and add vanilla.
  4. Pour almond butter mixture over dry ingredients, and stir until completely combined. Spread granola over a lightly greased baking sheet. Bake for 18-20 minutes (stirring once halfway through cooking), until coconut is toasted and granola starts to brown.
  5. Remove from oven and let cool.
  6. Transfer to a mixing bowl or storage container (will keep fresh for 1-2 weeks).
