We love Thanksgiving and all the leftovers that come with it! This Cranberry Turkey Salad is the perfect light meal after a big meal! If you don’t have any leftover Turkey we like to buy Frozen Turkey’s from Jennie-O and you can stick in the oven straight from the freezer!
3 cups cooked turkey meat from a 1 (11 to13-pound) JENNIE-O Oven-Ready Whole Turkey
2 Tablespoons of green onion, finely diced
3 Tablespoons celery, finely diced
3 Tablespoons of mayonnaise
½ cup dried cranberries
½ cup candied pecans (optional)
Salt and Pepper to taste
Shred your meat so it becomes stringy. Add your onion, celery, and mayonnaise.
Mix to combine then fold in craisins.
Place in an airtight container until you are ready to eat. Serve on your favorite bread, salad, or just eat it plain! I added candied pecans on top of my salad. But you can easily mix them in if you are having it on bread.
