Easy Freezer Salsa

 

This year, the only thing that seemed to grow in my garden was tomatoes. I literally had hundreds!!
I hated to see them go to waste, so I started trying to find as many ways to preserve them as possible.

My mom used to can things when we were little, but I remember that it was such a long process and as a work-at-home mom, I knew that I wasn’t going to have time for that. I love this recipe because it cooks on the stove for about 45 minutes, then you pour it in containers and stick it in the freezer. It will last for 3-4 months and still taste as delicious as the day you made it!

Serves: Makes 10-12 cups of salsa

Ingredients

  • 8 cups tomatoes, diced (you can peel them if you want)
  • 2 medium green peppers, diced
  • 2 large sweet onions, finely diced
  • 1-2 jalapeno peppers, seeded and finely chopped (I only did one and it was a mild salsa)
  • 1 (6 oz) can tomato paste
  • 1 (10.5 oz) can condensed tomato soup, undiluted
  • 1/2 cup white vinegar
  • 1 1/2 tablespoons sugar
  • 2 tablespoons salt
  • 4 teaspoons garlic powder
  • 1-2 teaspoons cayenne pepper (I used 1, but you can use more if you like more heat)

Instructions

  1. Add all ingredients into a large saucepan or stockpot. Bring to a boil, then reduce the heat to low.
  2. Let simmer, uncovered, for 45 minutes, stirring every couple of minutes.
  3. Pour into small freezer-safe containers (I used 16 oz containers and filled them about 3/4 full). Let the containers cool to room temperature, then stick in the freezer.
  4. Salsa will stay fresh in the freezer for 3-4 months. Let thaw and stir well before serving.
