Ingredients

  • 1 pound ground Italian sausage
  • 1 onion, chopped
  • 4.5 ounce can sliced mushrooms
  • 28 ounce jar spaghetti sauce
  • 16 ounce container cottage cheese
  • 1 pint ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 2 eggs
  • 16 ounce package lasagna noodles
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet, cook and stir Italian sausage until brown.
  3. Add mushrooms and onions; saute until onions are clear.
  4. Stir in spaghetti sauce, and heat through.
  5. In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
  6. Spread a thin layer of the meat sauce in the bottom of a 9x13-inch pan.
  7. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella.
  8. Cover pan with aluminum foil.
  9. Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese.
  10. Bake for an additional 15 minutes.
  11. Remove from oven, and let stand 10 to 15 minutes before serving.

    Looks yummy! This is a dumb question, but will the lasagna noodles be cooked through? Do I have to use the "oven-ready" kind? I've seen other recipes that call for the noodles to be boiled before assembling the lasagna, so that's why I'm asking (I've never made lasagna before). Thank you!
